Crackling Onion Rings - Serves 4


Perfect as a snack with beer, or stuffed inside a burger. These can even be reheated in an oven if they don't all get snaffled at once - unlikey though!

Piggin' Ingredients:

  • 2 large onions
  • 75g plain flour
  • 2 large eggs
  • 100g breadcrumbs
  • 50g Low & Slow BBQ Pork Crackling crushed to breadcrumbs
  • Sunflower oil, to fry

Recipe:

Peel & slice the onions into rounds about 1.5cm thick. Put the flour on a large plate. Whisk the eggs together in a shallow bowl. Mix the breadcrumbs and crackling together in another bowl. 

Working in small batches, toss the onion rings in the flour, then dip in the egg, followed by the breadcrumb and crackling mixture to coat. Lay on a baking sheet lined with parchment paper, while you coat the remaining onion rings.

Fill a high sided pan one-third full with the oil, and heat to 190 degrees C (or until a pinch of the breadcrumbs browns in 30 seconds). Fry the onions in 3 or 4 batches for 2 minutes, until golden. Scoop out with a slotted spoon and drain on kitchen paper. Serve immediatley.
