Ham, Egg & Pork Crackling Chips - Serves 2
The crackling seasons these chips and makes them extra cruncy. They are delicious with a fried egg and a thick slice of ham for a quick dinner.
- 2 large potatoes
- 4 tablespoons sunflower oil
- 40g BBQ Pork Crackling, crushed to crumbs
- 2 large eggs
- 2 thick slices of ham or leftover gammon
- piccalilli or ketchup to serve
Preheat the oven to 200 degrees C / 180 degrees C Fan / Gas Mark 6. Cut the potatoes into thick chips (leaving the skin on) and place in a large pan of water. Bring to the boil and simmer for 5 minutes, until they have tender edges. Drain and steam dry for 5 minutes.
Meanwhile put 3 tablespoons of the oil into a large baking sheet and heat in the oven for 5 minutes. Add the chips to the hot oil, then sprinkle over the crackling and turn to coat. Cook for 35-40 minutes.
When the chips are nearly cooked, heat the remaining oil in a large frying pan and fry the eggs for a few minutes. Serve the chips with ham and eggs, and piccalilii or ketchup if you like.
