Pork crackling that’s what.

Why not try out experimental and totally delicious crackling cookies recipe for a knock out festive treat?

MAKES 15:
150g unsalted butter, melted & hot 150g soft light brown sugar
150g granulated sugar
1 large egg
300g plain flour
1 teaspoon baking powder
150g dark chocolate chunks
30g Snaffling Pig Marvellous Maple crackling, crushed into small pieces

Beat together the butter & sugar until softened. Beat in the egg, then add the flour and baking powder. Let the mixture cool completely before adding the chocolate and crackling.

Chill the mixture for 30 minutes.
Preheat the oven to 180 ̊C / 160 ̊C fan / Gas Mark 4. Line baking sheets with baking parchment and scoop the dough into balls, spaced apart. Flatten the dough balls slightly and cook for 15-18 minutes.

And that’s the way the cookie crumbles.
