Ultimate Caesar Salad - Serves 4

Charring the baby gem adds so much flavour to the salad, and we think the crackling is a much better substitution for your run-of-the-mill crouton! This is a great low-carb recipe.

Piggin' Ingredients:

  • 6 baby gem lettuces
  • 3 tablespoons olive oil
  • 2 skinless chicken breast fillets
  • 75g sundried tomatoes, drained and roughly chopped
  • Parmesan shavings
  • 50g Snaffling Pig Perfectly Salted Crackling
  • salt and pepper, to season
  • lemon wedges, to serve
Ingredients for the Dressing:
  • 4 anchovy fillets in oil, drained 150g mayonnaise
  • 1 garlic clove, crushed
  • 3 tablespoons finely grated Parmesan
  • 2 tablespoons lemon juice

Recipe:

Begin by making the dressing. Finely chop the anchovies until they become a paste. Place in a small bowl and mix in the mayonnaise, garlic, Parmesan and lemon juice. Set aside.

Carefully slice the tip off the end of each of the lettuces (keeping the heart intact so they hold their shape), and slice each in half lengthways.

Heat a griddle/frying pan. Brush the cut side of the lettuces with 2 tablespoons of the oil, and griddle/fry for 1 minute until they begin to char. Arrange on a platter.

Put the chicken between 2 sheets of baking parchment, and bash with a rolling pin to flatten slightly. Rub the chicken fillets with the remaining oil and season, then griddle/fry for 4–5 minutes each side. Remove, and slice into strips. Add to the lettuce along with the tomatoes. Drizzle with the dressing and scatter over the Parmesan shavings and crackling. Season well and serve with extra lemon wedges.
